Part of the natural fat (cocoa butter) determines the various types of chocolate depending on the amount of cocoa butter remaining after cleaning and processing, and the addition of flavoring.
Unsweetened chocolate or baking chocolate is the ground chocolate nib molded into bars. Sweet drinking chocolate (syrup) has been refined and has had sugar added. Eating chocolate contains more cocoa butter and flavoring.
Sweet chocolate – in the manufacture of sweet chocolate, granulated or pulverized sugar is mixed with the chocolate liquor and the resulting paste is ground by pasting it over steel roll refiners. As the addition of sugar reduces the over-all fat content, additional cocoa butter must be provided to the mix to maintain sufficient fat to permit further processing and molding. A typical sweet chocolate contains 42% chocolate liquor, 42% sugar and 16% added cocoa butter. After processing, the sweet chocolate is cooled and molded into cakes, bars, and squares for use by the candy industry as coating for centers or cast directly into small bars suitable for eating.
Milk Chocolate is sweet chocolate in which the flavor has been modified by the addition of whole milk solids. In the U.S., the standard calls for a minimum of 12% milk solids, however good quality chocolate may contain as much as 20% to 22% milk solids.
Cocoa Powder – part of the fat or cocoa butter has been removed from cocoa powder, but it contains from 10% to 22% or more fat and is sometimes treated with an alkali salt that neutralizes the natural acidity of the cocoa and deepens the color.
